Observed sanitizer container, used to sanitize thermometers, stored directly above food on the front steam table. COS container was placed under steam table.

Separating the poisonous or toxic materials by spacing or partitioning.
Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, and single-service or single-use articles. This requirement does not apply to equipment and utensil cleaners and sanitizers that are stored in warewashing areas for availability and convenience if the materials are stored to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles.

Observed front food handling employee rinse spoon inside the rinse compartment with no sanitizer ion step. Employee also retrieved spoon that was submerged inside sanitizer compartment with a concentration of 100ppm Quat. COS spoons were re-washed, sanitizer compartment was drained and now reading 200ppm Quat.

Observed personal bottled beverage stored above food used for food service inside walk in freezer. COS beverage was relocated. Facility must have designated storage area for employee food and beverage. Employees also must drink from a single service cup with a lid and straw inside food prep area.

Observed employee wetting wiping cloth in hand washing sink.
A handwashing sink shall be maintained so that it is accessible at all times for employee use.
A handwashing facility may not be used for purposes other than handwashing.
An automatic handwashing facility shall be used in accordance with manufacturer’s instructions.
