Time for raw shell eggs not indicated at the time of inspection. CA: TCS food shall be on time as a public health control or temperature. When using TPHC writing procedures must be available and the time must be indicated on the food items. COS- PIC: indicted the time.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed drink dispenser and frosty machine dispenser unclean to sight and touch with black buildup. Observed interior of microwave unclean with accumulation of food debris. CA: All food contact shall be cleaned regularly and by sight and touch to prevent build up. COS- all surfaces cleaned and sanitized.
