Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM). Owner (only worker) states certification expired.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed unclean utensils inside produce sink.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed mop sink in disrepair. PIC advised to repair mop sink.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Exterior of stove, refrigerator, inside microwave, storage racks and exhaust hood are heavily soiled with accumulated grease, dust, or other debris. Also observed heavy build up of grease on exhaust hood. Advised PIC to deep clean and then increase cleaning frequency to at least weekly. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17A - toilet facilities: properly constructed, supplied, cleaned
Regulation: 511-6-1.07(5)(h) - cleaning plumbing fixtures- handsinks, urinals & toilets (c)
Observed toilet dirty. PIC advised to clean. Plumbing fixtures such as handwashing sinks, toilets, and urinals shall be cleaned as often as necessary to keep them clean and maintained.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(n) - maintaining premises, free of unnecessary items/litter (c)
Observed items not necessary for operations stored in kitchen. The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment, such as litter or equipment that is nonfunctional or no longer used and litter.
