2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed the only handsink blocked by a fabric curtain. Employees had to touch curtain with hands to access and leave hand sink
CA: Using a Handwashing Sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use.
Corrected on site, PIC moved curtain to prevent blocking handsink.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed staff using dry cloths to wipe down surfaces between uses and storing them next to cutting board for next use.
- Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n)
- Cloths in-use for wiping surfaces in contact with raw animal foods shall be kept separate from cloths used for other purposes.
- ...Wiping cloths and the chemical sanitizing solutions in which wet wiping cloths are held between uses shall be free of food debris and visible soil.
- Containers of chemical sanitizing solutions in which wet wiping cloths are held between uses shall be stored off the floor and used in a manner that prevents contamination of food, equipment, utensils, linens, single-service, or single-use articles.
COS: PIC made containers of quat sanitizer to store cloths between uses
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no test strips for quat sanitizer, high temperature dish machine or chlorine bleach used by staff to clean equipment at close.
CA: In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L (ppm) of sanitizing solutions shall be provided.
