12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(z) - miscellaneous sources of contamination (c)
Observed the condenser pipe leaking water onto a rack with boxes of unopened cookies, raw chicken and catering prep. CA: Advised PIC Food shall be protected from contamination that may result from a factor or source not specified under paragraphs (a) through (y) of this subsection. COS: PIC relocated all food items and a follow-up will be conducted in regards to the leak, PIC has been advised to provide a follow-up via email (please see comment section for details)
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed a leak coming from a pipe connected to the condenser inside of the walk-in cooler with a constant drip causing the walk-in cooler floor to be wet. CA: Advised PIC A plumbing system shall be repaired according to law; P and maintained in good repair.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed several dishes stacked while wet stored on top of the 3-compartment sink and under the prep table. CA: Advised PIC dishes shall be stacked In a self-draining position that allows air drying
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed grease build-up on the front service line behind the grill and underneath cooking equipment. CA: Advised PIC the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed cracked tiles holding food and water on the front service line. CA: Advised PIC 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
- Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
