6 large containers full to top of ground beef in prep top table to start cooling process barely submerged in ice bath. To cool large amounts of food to meet the required parameters( from 135F to 70F within 2 hrs and within a total of 6 hrs from 135F to 41F), a rapid method such as breaking large amounts of food into smaller portions, loosely covering containers and using an ice bath or the freezer to begin cooling will facilitate more rapid cooling. COS: Person in charge distributed the ground beef in smaller portions, put containers in ice bath and placed containers in the walk-in-cooler to facilitate more rapid coolimg.
