6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
OBSERVED TCS FOOD ITEMS IN PREP TOP COOLER COLD HOLDING ABOVE 41F (SEE TEMP LOG). CA: TCS FOOD ITEMS THAT ARE COLD HOLDING SHALL BE HELD AT 41F OR BELOW. COS: ITEMS HAD BEEN IN COOLER LESS THAN 4 HOURS. ITEMS RAPIDLY COOLED BACK DOWN TO 41F. PIC WILL USE ICE IN COOLER UNTIL REPAIRED OR USE 4 HOUR TIME AS PUBLIC HEALTH CONTROL.
