4-2B - food-contact surfaces: cleaned & sanitized

Observed a buildup on the chute of the ice maker. Cleaning of Equipment and Utensils. Equipment, Food-Contact Surfaces, and Utensils. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Discussed with PIC that machine needs to be cleaned more often and in between the "deep cleaning" periods to reduce build up.
6-2 - proper date marking and disposition
Observed several TCS items such as cheese, slice tomatoes, coleslaw and slice onions that were expired or past the discard date stored in the cold holding unit in the main kitchen. The day the original container is opened in the food service establishment shall be counted as day 1, except the day or date marked by the food service establishment may not exceed a manufacturer's use by the date based in food safety. The PIC voluntarily discard the items that were out of date. COS/Repeat .
