Observed sanitizer bucket stored on bucket stand but touching box of bagged pizza sauce on dry storage shelving unit in middle of kitchen. Chemicals shall be separated from food to prevent contamination.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed multiple buckets of sanitizing solution with rags stored below minimum levels of proper concentration. Sanitizing buckets remade during inspection.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed back door propped open without a means to protect against entry of rodents. Doors kept open for ventilation or other purposes shall be protected against the entry of insects and rodents, via mesh screen, fly fan, etc. Back door closed during inspection.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed multiple pizza dough racks stored on floor during inspection. Equipment shall be stored 6in. off the floor to prevent contamination. Racks relocated to three-compartment sink to be properly washed and stored.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed multiple employee beverages, cell phone, and vape stored on prep-top surface next to and above consumer food, single-serve containers, and equipment. Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. Employee items relocated during inspection.
