Regulation: 511-6-1.03(5)(c) - when to wash (p)
Observed employee using cell phone with gloves on and not washing hands and changing gloves before returning to food preparation. Employee also returned from bathroom, removed bracelets, and handled something in her personal bag all without washing hands before donning new gloves and returning to food prep. Employees shall wash hands after engaging in other activities that contaminate the hands and before donning gloves to initiate a task that involves working with food. Had employee wash hands several times during inspection.

Observed no hand drying provisions at the handwashing sink in front kitchen area. Each handwashing sink shall be provided with individual, disposable towels. Paper towels refilled during inspection.

Observed pitcher stored in handwash sink in back of kitchen. A handwashing facility may not be used for purposes other than handwashing. Pitcher relocated during inspection.

Observed pans of pizza crust stored uncovered in walk-in cooler and ready rack containing pepperoni pizzas with no plastic cover on rack. Food shall be stored covered to prevent contamination.
4-2B - food-contact surfaces: cleaned & sanitized

Observed multiple racks in walk-in cooler and multiple containers in kitchen with buildup on lids and shelves. Rack to be cleaned and lids replaced during inspection.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed employee making pizza while wearing multiple bracelets. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Employee removed bracelets during inspection.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee making pizzas without hair restraint. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. Employee put on hat during inspection.
