4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(o) - manual warewashing equipment, chemical sanitization using detergent sanitizers(c)
Observed dishes/utensils not washed, rinsed and sanitized in the correct order in a three-compartment sink; a two compartment sink was set up using sanitizer in the 1st compartment with detergent. COS, dishes were moved to the large 3 compartment sink. Large 3 compartment sink has a leak and was not being used because of it. Please repair the sink for proper use without leaks.
