observed foods, mac. having been cooked and cooled last night at 59 degrees. also foods in glass cooler above 41 degrees. COS. cooling 135 to 70 in 2 hours. 70 to 41 in 4 hours. cold holding must be 41 degrees or below. glass cooler not made for keeping foods cold it is a beverage cooler
