observed cloth covering rice in WIC. must use proper cover: foil, saran, etc.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(h),(i) - warewashing equipment, clean solutions; manual warewashing equipment, wash solution temperature (c,pf)
observed dish machine with crumbs and build-up on top. clean dish machine frequently
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
cleaning needed on: 1.door and handles of reach in coolers and prep tables 2. gaskets 3. keep all surfaces wiped fown regularly
