Observed dishwasher (low chemical sanitizing) reaching a temp above 120 F but no sanitizer present, bottle needs replacing. CA: Ensure dishwasher is temping at 120 F or above and sanitizer reading at 50 ppm.

Observed staff member re-enter kitchen from back door go back to cutting onions before washing hands. CA: Must wash hands when re-entering kitchen or before switching task.

Observed PIC cutting/prepping raw chk leave to toss out box outside, returned to kitchen and went back to cutting meat without taking off gloves, wash hands, and put on new gloves. CA: Wash hands during interuptions and before switching or resuming task.
Observed broccoli sitting in dish racks for dishwashers in dish area, unattended and unprotected. CA: Put broccoli in food grade container, then proceed to put it away or go ahead and prep. Eliminates possibility of contamination.

Observed no proper date marking on food items (veggie/meats) sitting in reach-in cooler at back of kitchen. CA: Date marking system is needed for items cut and prepared for serving, has 7 day window before discarding with exception to raw meats that have not been altered, prepared, or seasoned.
Observed staff member handling/preparing food with wrist bands on wrist. CA: No jewelry or wristbands can be worn while preparing food.
