Observed unpasteurized eggs being used in the facility. PIC stated that they make large quantities of egg at one time to serve residents. CA: Pasteurized eggs or egg products shall be substituted for raw eggs in the preparation of: (i) Foods such as Caesar salad, hollandaise or Béarnaise sauce, mayonnaise, meringue, eggnog, ice cream, and egg-fortified beverages, he requirement in paragraph 2(ii) of this subsection does not apply if:(i) The raw eggs are combined immediately before cooking for one consumer’s serving at a single meal, cooked to 145°F (63°C) for 15 seconds, and served immediately, such as an omelet, soufflé, or scrambled eggs; (ii) The raw eggs are combined as an ingredient immediately before baking and the eggs are thoroughly cooked to a ready-to-eat form, such as a cake, muffin, or bread. PIC will purchase egg products that are specifically labeled pasteurized.

Observed dry rice being stored in an old cheese balls container. CA: Single-service and single-use articles may not be reused. COS PIC removed dry rice from old cheese balls container and placed the rice in a food grade container.

Observed PIC state the eggs (with no label) in the RIC before entering main kitchen area from dining area are regular eggs from the store. Informed PIC that only pasteurized eggs are allowed at this facility due to it being a highly susceptible population. COS PIC discarded eggs and will be purchasing pasteurized eggs from an approved source ASAP.
