Sanitizer buckets were not available inside food prep areas. CA Sanitizer must be available inside food prep areas to sanitize countertops, tables and equipment when needed to prevent contamination. The concentration of the QAC sanitizer must test at 200PPM and 50PPM for chlorine (bleach). COS Sanitizer buckets were stored inside the prep areas and tested at 200PPM.

Several packages of swiss cheese stored inside the reach in cooler inside the kitchen was observed expired with a date of 9/8/24. CA TCS food items must be discarded by the expiration date labeled on the product to prevent foodborne illnesses.

Several containers of seasonings stored on the countertops of the front prep area was observed not labeled. Any food items stored out of its original packaged and transferred inside a food grade container must be labeled to properly identify the food item.

Several wiping cloths was observed stored on the countertops and not inside the sanitizer buckets. Stained wiping cloths were observed inside the cabinet on the front prep line and near the coffee station. CA Store wiping cloths inside the sanitizer buckets and provide clean wiping cloths as needed.
