6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS foods cold holding at above 41F in WIC, Baine-Marie cooler, and RIC 1 in main kitchen (see asterisks).
C/A: All TCS foods cold held must be maintained at 41F and below.
COS: Food discarded.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Observed 2-gallons of whole milk (Exp: 5/26/25) and 4-gallons of low fat milk (Exp: 6/1/25) held in WIC in main kitchen past manufacturer's use by dates.
C/A: Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date.
COS: Food discarded.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed ceiling tiles missing in ceiling of men's employee restroom in main kitchen area.
C/A: All physical facilities shall be maintained in good repair.
