Observed raw eggs stored above clear soup in the walkin; raw tuna and raw shrimp stored above cabbage, corn, and eggs in the walkin; and raw chicken above raw pork in the prep unit(bottom) main kitchen. CA: Food shall be protected from cross contamination by:(i) Except as specified in paragraph (i)(III) of this subsection, separating raw animal foods during storage, preparation, holding, and display from: (I) Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables COS: Vegetables were placed above raw fish and raw eggs were placed on shelf with other eggs away from the clear soup in the walkin; raw chicken was stored together in the prep unit.

Observed food stored uncovered: In the main kitchen walkin cabbage, onions, fried shrimp; near the three compartment sink bread crumbs, corn starch, tempura flakes, and teriyaki sauce; in the waitress area carrots, onions, and orange sauce.
