6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS foods cold holding at above 41F in front food service prep area (see asterisks).
C/A: All TCS foods cold held must be maintained at 41F and below.
COS: Per PIC, food out of temperature less than 1-hour due to rush. Food moved to cooler to rapidly cool- see corrective action temperatures. Garlic parmesan 1 discarded garlic parmesan 2 placed on TPHC.
17A - toilet facilities: properly constructed, supplied, cleaned
Regulation: 511-6-1.07(2)(l) - toilet rooms, enclosed (c)
Observed door to restroom in main kitchen left open and not self closing.
C/A: Except where a toilet room is located outside a food service establishment and does not open directly into the food service establishment, such as a toilet room that is provided by the management of a shopping mall, a toilet room located on the premises shall be completely enclosed and provided with a tight-fitting and self-closing door.
