6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed coleslaw in front food service beverage cooler and three containers of whiting fish, chicken gizzards, and coleslaw in walk in cooler cold holding above 41F.
CA: All TCS items shall be maintained at 41F or below when cold holding.
COS: All items discarded.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed several containers of fish and chicken stored uncovered in the cooler in main kitchen. CA: Unless cooling, food shall be stored covered. COS: All items were covered.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed debris and grease buildup on hood over fryers.
CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
PIC informed EHS that a cleaning crew is scheduled for 3/15/2026 and will clean the hood/fryer area.
