Observed deflector inside ice machine soiled with black accumulations in main kitchen.
C/A: Equipment food-contact surfaces and utensils shall be clean to sight and touch.
COS: Ice discarded, ice machine cleaned and sanitized.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no test strips on-site to verify QAC sanitizer concentration used at 3-compartment sink in main kitchen.
C/A: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
