Food debris was observed inside the microwave, at the bottom of the prep unit and on the wall/floor behind the grill. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed cracked floor tiles inside the kitchen. The wall cove was observed missing near the 3-compartment sink. CA: All physical facilities shall be maintained in good repair.
