Vegetable oil was observed on the floor inside the dry storage area. CA Food items must be stored 6 inches off the floor to prevent contamination.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Several damp wiping cloths were observed stored on the countertops on the prep lines. CA Wet and or damp wiping cloths must be stored inside the sanitizer bucket between uses.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed missing ceiling tiles above the walk-in cooler in kitchen area. CA All facilities shall be maintained and in good repair.
