Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed container lying in compartment sink containing lactic acid, concentration at 0 ppm. Sink mechanical dispensers not in good repair. Not properly mixing water and sanitizer to meet proper concentration.
C/A: If a chemical sanitizer other than chlorine, iodine, or a quaternary ammonium compound is used, it shall be applied in accordance with the EPA-registered label use instructions.
COS: Container removed. 3 compartment sink set up. Chlorine bleach used at 50 ppm. EHS coached PIC on 3 compartment sink set up and proper concentration.
