Observed, in grill prep, raw shelled eggs stored on top of ready to eat food (lettuce, turkey, vegetables), and raw sausage patties stored behind ready to eat food in prep top cooler causing possible contamination. Observed, in main kitchen walk in cooler, raw shelled eggs and raw chicken stored above ready to eat soup. Observed raw chicken stored above raw shelled eggs. CA: Food shall be protected from cross contamination by storing ready-to-eat food separate from raw animal food and by storing raw animal food according to its minimal internal cooking temperature. COS: All raw animal food was stored separate from ready to eat food. Raw chicken stored below eggs. Eggs and chicken moved to bottom shelf.
