Observed, in front food service bottom reach in cooler (left), ambient air temperature of 45-49°F. Spinach that was portioned at 11 am was 44°F and halved tomatoes prepped at 11 am was 44°F. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: Spinach and tomatoes were placed in walk in cooler to properly cold hold. PIC told EHS they will not use equipment until repaired.
