6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several foods (folded egg, ham x2, and raw, white-shelled eggs) holding above 41F in the cooler drawers located on the main dining prep side of the main kitchen. Per food employee these items were in unit since 5am
C/A: cold time/temperature control for safety (TCS) food shall be maintained at 41°F or below
COS: items discarded
NOTE: PIC moved food that was in temperature to another unit; Facility may not use this unit (the cooler drawers located on the main dining prep side of the main kitchen) until given approval from the health authority
