4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed multiple utensils (spoons) with stains and residues on food contact surface. Advised PIC equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: Had PIC relocate soiled items to dish machine.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed multiple chemical sanitization three buckets (CL-) measuring at 0 ppm. Advised PIC chemical wiping clothes held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: Had PIC increase chemical concentration of all sanitization buckets to 100ppm.
15C - nonfood-contact surfaces clean

Observed non-food contact surfaces with debris of shelving units, coffee cup trays, plastic utensil holder, and rusting shelving in reach-in-cooler. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
