Observed Jerk Chicken on counter thawing at room temperature in main kitchen. COS: Pic placed Jerk Chicken in reach in cooler. Advised PIC the proper cooling methods.

Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed no test strips available to check concentration for 3-Compartment sink sanitizer in main kitchen. Advised PIC concentration of the sanitizing solution shall be accurately determined by using a test kit.
