6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed pizza on a rack in the kitchen above 41°F. Advised PIC that food shall be maintained at 41°F or below. COS: PIC took pizza to PIC to cool them to 41°F.
6-1D - time as a public health control: procedures and records
Regulation: 511-6-1.04(6)(i) - time as a public health control (tphc) (p, pf, c)
Observed no time marking on food that was in the pass through warmer or being served. Advised PIC food shall be marked or otherwise identified to indicate time that is 4 hours past the point in time when food is removed from temperature control. COS: PIC had employee add labels.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed no paper towels were at any of the hand sinks. Advised PIC that each handwashing sink shall be provided with individual towels. COS: PIC added paper towels to all hand sinks.
