Observed TCS foods (chicken, shrimp, turkey) cold holding above 41F in the prep top cooler. CA: All TCS foods shall cold hold at 41F or below. Discussed with PIC when to discard product

Observed black substance on the interior walls of the ice machine in the main kitchen. CA: All food contact surfaces shall be cleaned to sight and touch
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed faucet handle missing from meat sink. CA: All plumbing fixtures shall be in a state of good repair at all times. Discussed with PIC to fix handle. Also observed leak at 3 compartment sink and ice machine

Observed prep top cooler in main kitchen with an ambient temperature of 51F. Also, observed dish machine inoperable. CA: All equipment containing TCS foods shall be maintained in a good condition at all times. Discussed with PIC to ensure all repairs are made to this equipment.
