Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Quat sanitizer concentration in 3-compartment sink measured at a concentration less than 200 ppm. Corrective action (CA): Quat sanitizer shall be maintained at a concentration of 200-400 ppm. Sanitizer remixed to proper concentration.
