Rice and potato salad cooling in deep and covered containers set in WI cooler. COS- Manager transferred rice and potato salad to shallow sheet pans to promote rapid cooling.

Food debris observed on underside of shelf positioned above kitchen steam table. Repeat.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Dust accumulation observed on floor fan positioned in dish wash room.
