4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed warewash machine not sanitizing (0ppm chlorine). Corrective action (CA): Chlorine concentration must be between 50-100ppm. Person in charge (PIC) will sanitize all dishes in 3-compartment sink until warewash machine can sanitize at 50-100ppm chlorine. PIC called technician during inspection to have machine serviced.
