Observed several foods not covered in front service worktop coolers. Corrective action (CA): Foods not actively cooling must be covered. Person in charge (PIC) covered foods during inspection.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Dry wiping cloths used to line shelf behind front service preparation area. PIC removed wiping cloths during inspection.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed hole in wall adjacent to soup station.
