5-1B - proper reheating procedures for hot holding

Observed cheese being reheated in the oven for more than 3 hours. Cheese is prepared in house. Must reheated to 165 degrees with in 2 hours. COS by discarding.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed ice bin left uncovered in the bar area. COS by closing the lid.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed tongs used to grab the cooked chicken is left in the crevices if the grill. Must either hot hold above 135 or clean and sanitize every 4 hours.
