Observed eggs stored in stand up refrigerator on top of frosting. Eggs must be stored below any ready to eat foods.
COS: Rearranged cooler
1-2A - pic present, demonstrates knowledge, performs duties

No person in charge at time of inspection. Employee present not trained on food safety.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed trays that had been washed and set out to dry without sanitizing. Staff had not been trained on proper sanitizing.
COS: Inspector demonstrated how to set up proper sanitizing solution and staff immersed trays for proper sanitizing time.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed frosting spatulas from this morning that had not been washed and still stored in/on frosting.
In use utensils must be wash/rinsed/sanitized after use or at least every 4 hours when in continual use.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(g)(1)&(3) - kitchenware and tableware, single-service/-use items properly handled to protect food-/lip-contact surfaces (c)
Observed coffee stir straws that were not individually wrapped or dispensed in a manner that prevents contamination. Use only individually wrapped stir straws or provide a dispenser that protects straws from customers touching.
