Observed unpasteurized shell eggs with a sell-by date of 1/15 stored in cooler. Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. P

Observed in-use chlorine sanitizer bucket for kitchen area at 0 ppm. Must be 50-100 ppm. COS by remaking to 50 ppm.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(g)(1)&(3) - kitchenware and tableware, single-service/-use items properly handled to protect food-/lip-contact surfaces (c)
Observed unwrapped plastic forks in dining area stored upright with the food contact portions exposed to contamination. Single-service and single-use articles shall be stored as specified under paragraph 1 of this subsection and shall be kept in the original protective package or stored by using other means that afford protection from contamination until used. Must invert utensils.
