6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several items stored in the walk-in cooler with the intention of cold holding above the maximum safe temperature of 41F. CA: Following a conversation with the PIC, the items were not properly cooled the night before which resulted in elevated cold holding temperatures. PIC discarded all product.
