Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed multiple knives on the back magnet rack in the main kitchen by all reach in coolers to have food debris built up on the knives. CA: PIC shall clean all knives to sight and touch. RCA: Food-contact surfaces and utensils shall be clean to sight and touch
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed dust and debris build up on wire racks being used to store cleaned dishware in the main kitchen. CA: PIC shall clean all wire racks. RCA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed walls throughout the facility to be soiled with food debris and splashes. Specifically in the back by the reach in coolers. CA: PIC shall clean walls and ensure they remain cleaned.
