4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed soda machine nozzles to have slime like black build up on inside of nozzle in direct contact with the soda. CA: PIC dismantled the nozzles and cleaned them thoroughly and placed them in a sanitizer bucket to soak. RCA: surfaces of utensils and equipment contacting food that is not time/temperature control for safety food shall be cleaned:
(i) At any time when contamination may have occurred;
(ii) At least every 24 hours for iced tea dispensers including nozzles and consumer self-service utensils such as tongs, scoops, or ladles;
(iii) Before restocking consumer self-service equipment and utensils such as condiment dispensers and display containers; and
(iv) In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment:
(I) At a frequency specified by the manufacturer; or
(II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.

Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed evidence of pest droppings in dry storage. Observed chewed bag of grits in dry storage. CA: PIC discarded grits. PIC shall clean out the dry storage and clean floor. PIC will contact pest control company. RCA: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: Routinely inspecting the premises for evidence of pests. Using methods, if pests are found, such as trapping devices or other means of pest control.

Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
Observed no previous inspection report posted in visible public view. CA: PIC shall ensure inspection is posted in public view withing 15 feet of entrance. RCA: The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed a reach-in cooler to have a broken door not able to stay closed. CA: PIC moved all food out prior to inspection and stated they will be working towards fixing the door. RCA: Equipment shall be maintained in a state of good repair and condition. Such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
