Observed improper separation of ready-to-eat foods and raw fruits/vegetables in walk-in cooler. Observed raw beef brisket stored over raw chicken all stored over raw beef sirloin. Observed a box of ears of corn and avocados stored on top of vacuum sealed bag of whole cut steak. CA: PIC rearranged cooler to properly store items. Facility is in great need of additional storage in walk-in cooler to properly separate food items away from kegs.

Observed responsibilities of the PIC not being met at time of inspection due to multiple violations directly relating to foodborne illness. Violations included not maintaining a certified food safety manager of staff, improper separation of raw foods and ready to eat foods and not ensuring food-contact surfaces are clean. Observed dish washer not producing a sanitizer residue on dishes after multiple washes. RCA: Bartender attempted to prime the unit but still would not produce a chemical residue. Facility shall use the three-compartment sink for all dishes until unit is repaired and verified by the Chatham County Health Department (912) 356-2160.

Observed dish washer not producing a sanitizer residue on dishes after wash. CA: Upon further investigation, it was discovered that the sanitizer had run out and the bartender changed the solution. The machine began to produce a chemical residue.

Observed whole cuts of cooked beef at temperatures above 41F. Discussed with PIC and items placed within the unit were not properly cooled to temperature. CA: PIC discarded all out of temp foods and will begin to log cooling foods.
