CA: All dairy products were placed in cooler at start of shift and holding temperatures of 42F-44F. All items were rapidly cooled and placed in functioning cooler. Maintenance is recharging the unit.

Observed expo cooler capable of maintaining safe temperatures of 41F or below only on the right side of the cooler. At the "lid break" the temperatures increased from 39F-44F. CA: PIC refilled the unit at start of shift. PIC will verify temperature of items and shift change (6-hours) and discard product not within proper range. Maintenance is recharging unit.

Observed dessert cooler not capable of maintaining temperatures of 41F or below (ambient-54F). CA: Maintenance has indicated the condenser is frozen over. All dairy products (sour cream, butter, cheesecake, key lime pie) were discarded and the unit was turned off for defrosting.
