See base of operations inspection from 2/13/2025. Observed multiple items (metal pans, trays etc.) wet stacked on dry dish rack. Observed employee placing wet items (metal pans, trays etc.) placed on top of dried dishes.
CA/COS: Directed PIC to inform employee of wet nesting and remove all wet items to an air-dried area.
RCA: Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:
Shall be air-dried or used after adequate draining before contact with food.

CA: Directed PIC that handle should be cleaned daily after each active use.

RCA: The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
