4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the chemical sanitizer on the dishwashers at both the bar and main kitchen areas was not dispensing sanitizer properly. Chlorine sanitizer concentration measured 0 ppm on the bar dishwasher and 0 ppm on the main kitchen dishwasher.
(CA/COS): (PIC) immediately discontinued use of both dishwashers. A three-compartment sink will be used for warewashing and sanitizing until the dishwashers are repaired and verified to be dispensing sanitizer at the required concentration.
