Observed mangoes stored on top of raw bacon. Observed mint leaves stored in contact with raw shell eggs and raw bacon.
RCA: Facility is to store food items according to cook temperature and separate ready to eat foods from raw animal foods.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed mechanical dishwasher not pulling sanitizer.
RCA: Facility is not to use dishwasher until serviced and sanitizer is pulled in correct concentrations.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed dishwasher gauge not working at all.
RCA: Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.
