Observed prep top cooler holding above minimum cold holding temperature of 41F for the following TCS items (Sliced american cheese(53F), Sliced Cucumber (53F), Lettuce shredded (52ZF).
COS: PIC removed items and will continue to place on ice bath until fixed. A Work order has been created for equipment.

Observed multiple foods in hot holding warmer that were below proper hot holding temperatures. Upon inquiry, employee explained that foods were reheated in a tilt skillet with water and had only been placed in warmer 10 minutes beforehand.
COS CA: PIC removed all foods for reheating in the skillet but would ensure that foods would be heated to a temperature of 165F for at least 15 seconds. Hot holding temperatures are 135F or above.
