6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed sliced lettuce, and multiple TCS sauces (cocktail, sweet chili, ranch, etc.) in reach-in cooler above 41F. Observed Ambient temperature for reach in cooler above 41F (60F).
COS: PIC removed TCS items and engaged with maintenance with on-site repair which Fixed issue and outcome.
