Observed no thermometers inside the reach in coolers.
RCA: Food temperature measuring devices shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed prep top cover to be broken.
RCA: Equipment shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed heavy food debris in reach in cooler. Observed chicken blood at the bottom of reach in cooler where meat is stored.
RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of food residue and other debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(c) - floor and wall junctures, coved, & enclosed or sealed, water-flushed floors provided with drains & graded to drain (c)
Observed drain cover to be missing in the dish washing area.
RCA: The floor and wall junctures shall be coved and closed to no larger than one thirty-second inch.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee using cell phone at front counter.
RCA: Employees should store electronic devices in designated areas to prevent contamination.
