Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed the ice machine to have a pink built up in the inside.
RCA: Told PIC that they need to increase the cleaning frequency of the ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Advised PIC to melt and drain the ice machine to have it cleaned and sanitized before use.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed facility to not have the proper test strips for high heat dish machine.
RCA: Told PIC that they need to get high heat test strips in order to properly make sure that utensils are properly be sanitized at a high temperature.
